Chipotle-Style Barbacoa Beef

In my quest to make Chipotle-style burritos at home, I decided to make Barbacoa beef.
Another thanks to Gina of Skinny Taste for her recipe of Chipotle's Barbacoa beef on behalf of my husband's stomach.  I did modify the recipe in terms of ingredients and directions, but used her recipe as the base.  I rarely make beef (personal preference) as it is generally less lean and heart healthy than my usual vegetarian, fish, or chicken dishes.  However, when you do want to make beef, here is a handy wallet card of the lean cuts of beef.  Feel free to serve this with my cilantro-corn salsa and cilantro-lime rice for a tasty meal.  I hope you enjoy the barbacoa beef in your own burritos, as a sandwich, over rice, or by itself!

Ingredients:
1 lb Beef (round roast--eye, bottom, or top), trimmed of fat
1/2 tsp. Black Pepper
1 Tbsp. Extra-Virgin Olive Oil
2 Tbsp. Minced Garlic
2 Tbsp. Minced Onion
1 Tbsp. Lime Juice
2 tsp. Chili Powder
2 tsp. Ground Cumin
1 tsp. Oregano
1 Bay Leaf
1/3 Cup Water

Directions:
1.  Trim fat from meat and cut into 4 inch pieces.  Put in crockpot/slow-cooker.
2.  Pour/place all of the ingredients in slow-cooker.  Turn heat to low and cook for 6-8 hours, or until meat is cooked through.  Remove bay leaf.
3.  Use two forks to pull the meat apart (shred it) once cooked through.  Cover and let cook for another 15-20 minutes. Serve immediately.

Enjoy as a spicy sandwich or for the meat in a Chipotle-inspired burrito.

Caprese Chicken

I love easy, healthy entrees.  This dinner is simple and straightforward to make, yet tastes totally gourmet and looks great too.  My husband's reaction was something along the lines of, "Wow, fancy," which means he was totally impressed.  Did I mention how healthy this meal is?  Lean protein, heart-healthy olive oil, basil, and red peppers in this Mediterranean dish.
Ok, false advertising...this is not really "caprese" chicken, as I used red peppers instead of tomatoes...but it looks very caprese-like.  And it tastes so good, so whatever I'm calling it, just try it.

Ingredients:
1 lb. Chicken Breasts (boneless, skinless; 3-4 breasts)
2 Tbsp. Balsamic Vinegar
3 Tbsp. Extra Virgin Olive Oil, Divided
1 Tbsp. Minced Garlic
1/2 Red Pepper, Cut into Strips
4 Basil Leaves
4 oz. Fresh Mozzarella, cut into 3-4 slices (one per chicken breast)

Directions:
1.  Marinade chicken breasts in balsamic vinegar, 2 Tbsp. of the olive oil, and the garlic for 2-3 hours.
2.  Grill chicken breasts, bake, or sautee on stovetop until cooked through (I baked at 350 for about 15-20 min).
3.  While chicken is cooking, heat remaining 1 Tbsp. olive oil in skillet.  Add red pepper strips and saute for 5-7 minutes, or until soft and cooked thoroughly.
4.  Place one chicken breast on a plate.  Top with a slice of Mozzarella, then basil leaf, then 3-4 red pepper strips.

Serve immediately and enjoy!

Cauliflower-Crust Pizza

I love Pizza.  Let's just get that straight.  I also like to eat healthily, so I was so excited to see a recipe for pizza with a cauliflower crust.  That's right folks, a light, vegetable, low-carb, natually gluten-free crust.  Beth's blog, eat. drink. smile. was the inspiration for this Cauliflower Crust Pizza.  I've modified her recipe by preparing the cauliflower a little differently (mashing instead of "ricing") and it worked great.  This meal is loaded with veggies, herbs, healthy cheese, and lots of yumminess.  It has also reminded me that I haven't posted my awesome Mashed Cauliflower recipe yet (note to self to do so soon).

This recipe makes 2, 9" pizza crusts.  So, feel free to follow the recipe as is for two pizzas.  However, if you are looking for just one pizza, then do half of everything.  If you still want to use the entire head of cauliflower though, I recommend making some Mashed Cauliflower with the other half of the cauliflower and saving it for the next day.

Ingredients:
Yields 2 - 9" Pizza Crust
1 Large Head of Cauliflower
2 Cups Shredded Low-Fat Mozzarella Cheese (or Italian Blend)
2 Egg Whites
2 tsp. Dried Oregano
2 tsp. Garlic Powder
2 tsp. Dried Basil
Extra-Virgin Olive Oil, optional
*Pizza Sauce (or plain tomato sauce with garlic/oregano/basil added), Shredded Cheese, and Your Choice of Toppings

Directions:
1.  Remove stems and leaves from cauliflower.
Chop the florets into small chunks.
2.  In a saucepan over medium-high heat, bring 1 cup of water to a boil.  Add in cauliflower and cook for about 10-15 minutes, or until cauliflower is tender.  Drain cauliflower.
3.  Using a potato masher (or food processor), mash up the cauliflower.  Don't over-mash (or over-pulse) as you want texture and for it not to be a complete puree.
4.  Preheat oven to 450 degrees.  Spray a baking sheet with non-stick cooking spray.
5.  In a medium bowl, stir together 1 Cup of the mashed cauliflower, egg white, and cheese.  Stir in the oregano, garlic, and basil.
6.  Spread mixture into a 9" circle on the baking sheet.  Brush olive oil over the top of the mixture (optional).
7.  Bake at 450 for 15 minutes, or until lightly browned.
8.  Remove from oven.  Add sauce to crust, toppings (I used diced tomatoes and my Spinach and Artichoke Dip/Spread on one and ham/pineapple/pizza sauce on the other), and cheese.
9.  Bake at 450 for 5-10 minutes, or until cheese is melted.

Serve immediately and enjoy!


Bacon Ranch Chicken Pasta

Attention all crockpot owners:  make this.  I absolutely love using my slow cooker for a number of different recipes (scroll down and see my list of labels--click "crockpot" or "slow-cooker" for a number of recipes for time-starved families.  Here is just one more quick 'n easy crockpot recipe--made with hearty flavors of bacon and ranch (minus the fat, preservatives, and calories).  Dump everything together and enjoy.
This was inspired by a recipe in Cooking Light, but modified for crockpot time ease and health (I didn't use actual sat-fat-loaded bacon).


Ingredients:
4 Chicken Breasts, cut into 2" pieces (slightly thawed)
1/2 lb. Turkey Bacon, cooked and broken into bits
1 Can Cream of Mushroom or Cream of Chicken Soup (reduced sodium)
1/2 Cup Sour Cream
1 1/4 Cups Skim Milk
1 tsp. Minced Garlic
1/2 tsp. Garlic Powder
1 tsp. Onion Powder
2 tsp. Dill Weed
1 Cup Shredded Cheese (I used Mexi-blend, Low-Fat)
Cooked Pasta (egg noodles, elbow macaroni, spaghetti, fusili, rotini, you choose) according to package directions.

Directions:
1.  Combine all ingredients (minus pasta) in crockpot.  Stir well to combine.  Heat on Low for 2-3 hours, or until chicken is cooked through.

Spoon over cooked pasta and enjoy!

Spinach & Artichoke Dip

This spinach and artichoke dip was inspired by my desire to replicate Panera Bread's Turkey Artichoke Panini.  In doing so, I could have purchased an artichoke spread in the store, or I could make my own.  Soo...here we have an awesome Spinach and Artichoke dip.  It's easy to make, totally delicious, and made as healthy as you can get it.  It's also really versatile.  It makes for a great game day snack served with fresh vegetables, pita chips, bread pieces, or tortilla chips.  You can also serve it as a sauce over cooked pasta, or as a spread for sandwiches, like my Turkey Artichoke Panini.

Ingredients:
1 Jar (6-8 oz) Marinated Artichoke Hearts, Drained and Chopped
1/2 (10-15 oz) Bag (or Box) Frozen Chopped Spinach, Thawed and Drained
1 (8 oz) Package Light or Non-fat Cream Cheese
1/2 Cup Grated Italian Blend Cheese (Romano/Parmesan/Asiago/Provolone)
1/2 Cup Light or Non-Fat Sour Cream
2 tsp. Minced Onion
2 tsp. Garlic Powder

Directions:
1.  Spray crockpot with nonstick cooking spray.  Combine all ingredients into crockpot.
2.  Turn to low and heat for 30-60 minutes, or until hot.

Serve and Enjoy!

Black Bean, Ham, and Pumpkin Soup

I was digging through my cookbook...which is actually a huge binder, jam-stuffed with loose recipes (and some actually inserted into the binder).  It's a total mess (and here is a photo for you).  Anyway, I came across a recipe I made for the first Halloween party my husband and I hosted (in 2007--the year we met, aww, how sweet).  It is for Black Bean and Pumpkin soup...which might sound weird to you at first, but it was SO darn tasty...and it also looks really cool served at a Halloween party.  Although you an obviously serve it anytime.  It's a great, hearty soup for autumn.  It's also super-easy to make and so healthy for you.

Ingredients:
3 (15 oz) Cans Black Beans, Rinsed and Drained
1 (16 oz) Can Diced Tomatoes
2 Tbsp. Extra-Virgin Olive Oil
3 Tbsp.Minced Onion (or Chopped Onion, again, given my aversion, I go with minced)
3 Tbsp. Minced Garlic
1/2 tsp. Black Pepper
3 1/2 - 4 Cups Beef Broth (Sodium-Free)
1 (15 oz.) Can Pumpkin Puree
1/2 Lb. Ham, Cut Up (You can use either slices and cut into 1-2" squares, or buy a hunk of ham and cut into 1" cubes--your choice)
3 Tbsp. Sherry Vinegar

Directions:
1.  In a large bowl, use your immersion blender to puree 1/2 the beans and the tomatoes.  If you don't have an immersion blender (then go get one!), then you can just puree the beans/toms in your blender or food processor.
2.  Heat your crockpot to low heat.  Add in all of the ingredients, including the bean puree. (Aside: is it weird that EVERY time I say/write "all of the ingredients," I get all excited--given my blog title?  Ok, yes, it is weird, weirdly nerdy).
3.  Stir until well-combined, cover, and heat for 2-3 hours, or until hot and slightly thickened.

Serve immediately, topped with a dollop of sour cream (if you prefer), and Enjoy!

Butternut Squash & Apple Soup

More autumnal recipes!  I'm all about fresh, local, and organic ingredients (as I'm sure you know by now) and just bought a bunch of apples and squash for making baby food.  And again, I had plenty of leftovers, so I decided to come up with another fall soup.  Like my Carrot and Sweet Potato Soup recipe, this recipe is pretty simple in terms of number of ingredients and directions.
I looked around at a few different websites, and found a few different recipes for squash and apple soup.  Inspiration came from recipes by Food Network's Ina Garten and Emeril Lagasse.
I hope you enjoy it!

Ingredients:
1 Butternut Squash, Halved Lengthwise, Seeds/pulp removed
2 Apples (Granny Smith, McIntosh are good, but I actually used Fuji)
2 Cups Chicken Stock
2 Tbsp. Olive Oil
1 Tbsp. Minced Garlic
1 Tbsp. Minced Onion
1 1/2 tsp. Chili Powder
1 tsp. Black Pepper
Sour Cream, for garnish (optional)

Directions:
1.  Preheat oven to 350 degrees.  Place squash halves, skin side up, in glass baking dish.  Pour water, so about 1" sits in dish.  Place in oven for 40-50 minutes, or until squash is tender.
2.   Meanwhile, peel and core apples.  Slice and place in stockpot with chicken stock.  Set aside.
3.  In a large saucepan, heat the olive oil over medium heat.  Add in the minced garlic and onion.  Cook about 4-5 minutes.
3.  Add the onion and garlic mixture to the stockpot.  Bring to boil and stir for about 5-7 minutes, or until apples are tender.  Reduce heat to low.  Add in chili powder and black pepper.
4.  Remove squash from oven, flip squash over and scrape out the "meat."  Add all of the squash to the apple stockpot mixture.  Discard squash skins.
5.  Using a blender or immersion blender, puree the ingredients (you may need to work in batches).

Serve warm with a spoonful of sour cream in the middle.  Enjoy!

Freezer-Friendly:  You can also put this soup in dated/labeled freezer-bags and store in your freezer for up to 3 months.

Ranch Sour Cream Dip

Here is a quick and tasty alternative to ranch and other chip dips and dressings.  This recipe is easy to make, low in calories and doesn't have all the extra sodium and preservatives in store-bought dressings and dips.  I actually came up with it after making my Buffalo Chicken Meatballs and realizing I had no ranch dressing (I prefer ranch over bleu cheese, personal preference) to dip them in.  So, I looked around in my refrigerator and cupboard for what I did have and came up with this recipe.  It is really tasty and a perfect complement to the spice in the wing sauce.  You could also serve it as a veggie dip, with chips or pita, on a baked potato, or as an alternative to sour cream for tacos or other Mexican-inspired dishes.  If you prefer a "heartier" (granted, it becomes less healthy) flavor, add in a bit of (light) mayonnaise.   

Ingredients:
1 Cup Low-Fat or Fat-Free Sour Cream (Organic)
1 tsp. Dill
1 tsp. Garlic Powder
1 tsp. Chopped Chives (I used dried instead of fresh)
1/2 tsp. Dried Parsley
1/2 tsp. Onion Powder
Sea Salt & Black Pepper, to taste

Directions:
1.  Combine all ingredients in a bowl and stir together, mixing well.

Serve and Enjoy!

Buffalo Chicken Meatballs

 Football season requires plenty of appetizers.  Wing sauce and meatballs are both classic favorites.  So why not marry them and make them a bit healthier?  :)  This recipes uses ground chicken and heart-healthy olive oil compared to fried foods and fatty meats.  Eat them by themselves, dipped in (fat-free or low-fat) ranch or bleu cheese dressing (or if you prefer less chemicals/preservatives, try my healthy Ranch Sour Cream Dip, in the photos), or paired with cheese and celery.

Ingredients:
3/4 Cup Wing Sauce (I used Ashanti, could use Frank's--but higher in sodium--you really gotta check the sodium on wing sauce--it can get c-r-a-z-y high), plus more to serve (optional)
1 Tbsp. Olive Oil
1 lb Ground Lean Chicken (as lean as you can find!)
1 Egg
1/2 Cup Plain Breadcrumbs (or Panko)
1/2 Cup Celery, finely diced
1/4 Cup Minced Onion
1/2 Cup Reduced-Fat Mozzarella Cheese (or use a Bleu--I just prefer mozzarella/ranch flavors with my wing sauce)
1 tsp. Minced Garlic

Directions:
1.  Preheat oven to 400 degrees.  Cover a baking sheet with foil and spray with nonstick spray (butter flavored or olive oil is my preference).
2.  Combine all the remaining ingredients in a large bowl.  It will be pretty sticky.
3.  Roll the meat into 1" balls (use an ice scream scoop if you prefer consistency).  Place on baking sheet in single layer.  Bake until cooked through, about 15 minutes.
4.  Remove from oven and let cool a few minutes.  Place on dish to serve.  Drizzle extra wing sauce over meatballs if you prefer (I did not) and serve with dressing and celery.

Carrot & Sweet Potato Soup

So lately I've been making a lot of baby food and spending less time being innovative in the kitchen for the adult meals.  Last week, I was making some plums, carrots, and sweet potatoes for Maxwell to eat and had more than enough potatoes and carrots left over.  Thus, I decided to make a Carrot and Sweet Potato Soup for an adult dinner!  You can follow either set of instructions (pureeing carrots and potatoes first, or later on).
Very healthy meal, loaded with beta-carotene, vitamins A, B6, K, C and dietary fiber.

Ingredients:
1 lb Fresh Carrots (peeled, cut into roughly 1" pieces) (Organic, preferably)
2 Sweet Potatoes/Yams (Organic, preferably)
2 Tbsp. Butter (again, Organic, you get it, I know...)
1/4 Cup Minced Onion (or Chopped Fresh Onion)
2 Tbsp. Minced Garlic
1/2 Cup Dry White Wine
4 Cups Water
1 Bouillon Cube (Vegetable or Chicken) (or 2 tsp. Granulated Bouillon)
Sea Salt, to taste
Black Pepper, to taste

Directions:
1.  Peel the sweet potatoes and cut into 1" cubes (roughly, precision not needed).
2.  Cook butter, onion, garlic, carrots, and potatoes in a large stockpot over medium heat for 5-7 minutes.  Pour in the wine and cook 2-3 minutes, or until it is reduced about 50%.
3.  Add water and bouillon and bring to a boil (turn heat to medium-high).
4.  Reduce heat to low and simmer for 15-20 minutes, or until carrots and potatoes are tender.
5.  Remove from heat and puree. You can do this with a regular blender, immersion blender, Baby Bullet in my case (it was a great gift!), or whatever (even a masher).  I actually use my immersion blender A LOT too. You will have to blend in batches, most likely.
Now skip to the bottom....

Alternative Directions (Puree first):
(if for some reason you want pureed carrots or sweet potatoes alone for another dish/baby food)
1. Preheat the oven to 400 degrees F.
2.  Take peeled, cut up carrots and put in saucepan with 2 cups water.  Cook over medium-high heat for about 10 minutes, or until carrots are tender and break easily with a fork.
3.  Meanwhile, poke sweet potatoes with a fork multiple times.  Then wrap sweet potatoes in foil and bake in preheated oven for 45-55 minutes (depends on size of potatoes), or until potatoes are tender.
4.  Puree the carrots however you want.  You can do this with a regular blender, immersion blender, Baby Bullet in my case (it was a great gift!), or whatever (even a masher).  I actually use my immersion blender A LOT too.
5.  Using a fork, scrape off the skins of the semi-cooled sweet potatoes.  Puree them with your preferred device and remaining 2 cups water.
6.  Cook butter, onion, and garlic in a large stockpot over medium heat for 3-5 minutes.  Pour in the wine and cook 2-3 minutes, or until it is reduced about 50%.
7.  Add in carrot and potato purees and bouillon.  Cook over medium heat for 5 minutes, stirring well.
8.  Reduce heat to low and simmer for 10 minutes.

Feel free to vary it by stirring in different herbs (thyme or basil or ginger) and/or adding some light cream to it.  Top with croutons.  Season with the sea salt and black pepper, to taste.

Serve immediately and enjoy!

Lime Chicken with Black Bean Sauce

I love a meal with the spicy, exciting, flavorful tastes of Mexican and Spanish cuisine.  This recipe combines traditional Mexican flavors of lime, cilantro, black beans, tomatoes, and green chilies in a heart-healthy way.  Serve with some Spanish rice, or as a meal by itself.

Ingredients (serves 4):
Lime Chicken:
Juice of 1 Lime (Roughly 2 Tbsp. Lime Juice)
1 1/2 Tbsp. Extra-Virgin Olive Oil
3 tsp. Dried Cilantro (or 3 Tbsp. Fresh)
Black Pepper and Sea Salt, to taste
1 lb. Chicken Breasts, Thawed

Black Bean Sauce:
1 Can (15.5 oz) Black Beans (Organic)
1 Small Can Green Chilies
1 Can (15.5 oz) Diced Tomatoes (Organic)
1 tsp. Chili Powder
1 tsp. Onion Powder
2 Tbsp. Minced Garlic
3 tsp. Dried Cilantro (or 3 Tbsp. Fresh)
1/4 Cup Light Mexican-blend Shredded Cheese

Directions:
1.  In a small bowl, stir together olive oil, lime juice, cilantro
2.  Place chicken breasts in 9x9 baking dish (sprayed with cooking spray).  Pour lime marinade over the top and let sit for about an hour or two (could let sit overnight in refrigerator if you'd like).
3.  Preheat oven to 375 degrees F.  Put chicken in oven for 30 minutes.
4.  Meanwhile, over medium heat in a large saucepan, stir together the black beans, green chilies, tomatoes, and minced garlic.  Stir to combine flavors for 15 minutes.
5.  Reduce heat to low.  Add in the cilantro and shredded cheese to the black bean mixture.  Stir occasionally for 10 minutes.
6. Either using a masher, or a blender (immersion or regular), lightly puree the black bean mixture.  Don't over-mix, just a short minute to slightly puree the mixture (but you still want some big chunks of beans, etc).
7.  Remove chicken from oven.  Place chicken breast on plate and top with heaping spoonful of black bean sauce.  Serve immediately with a fresh lime quarter to squeeze over chicken.

Spinach & Artichoke Stuffed Shells

    When we were in our first days of being home with our newborn son, we had some amazing friends stop by with a prepared meal of Stuffed Shells for us to eat (aside: that friend was Lindsay of Hoosier Baker; she knows her way around a kitchen, yum).  It was so delicious and a deviation from the typical lasagnas and casseroles (although ANYTHING is appreciated when you just have a baby), that I wanted to make this dish for some other friends of ours who just had a baby.  I looked at a number of recipes before coming up with my own version below.  This meal is great served with some Italian Parmesan Cheese Bread (like my Crusty Cheese Bread, but use Mozzarella for this meal) and/or a fresh mixed green salad with oil and vinegar. 

      • Ingredients:
        • 1 tsp. Dried Oregano 
        • 1 tsp. Dried Parsley (or 1 Tbsp. Chopped Fresh)
      • (28-ounce) Can Crushed Tomatoes (Organic)
      • (10-ounce) Can Tomato Sauce (No-Salt, Organic)
      • 1/2 Cup Shredded Mozzarella Cheese, Divided in two
      • 1 Cup Crumbled  Feta Cheese (reduced-fat), Divided in two
      • 1/2 Cup Ricotta Cheese (reduced, or non-fat)
      • 1/2 Cup Shredded Parmesan or Romano (or blend)
      • 1 Egg (or substitute)
      • 1/2 tsp. Black Pepper
      • (14-ounce) Can Artichoke Hearts, Chopped
      • (12-16 ounce) Package Frozen Chopped Spinach (thawed, drained, and squeezed dry)
      • 2 Garlic Cloves, Minced
      • 35-40 Cooked Jumbo Pasta Shells (12 ounce package)

      • Directions:
      1.  Preheat oven to 375°.
      2.  Cook Pasta Shells according to package directions. 
      3.  Combine oregano, parsley, tomatoes, and tomato sauce in a medium saucepan. Cook over medium heat; 10-13 minutes, or until slightly thickened, stirring occasionally.  Remove from heat; set aside.
      4.  Combine 1/4 Cup Mozzarella, 1/2 Cup Feta, and the next 7 ingredients (all minus pasta shells) in a medium bowl. Spoon about 1 1/2 tablespoons cheese mixture into each pasta shell; place stuffed shells in a 9"x13" baking dish coated with cooking spray.
      5. Spoon tomato mixture over shells. Sprinkle with remaining 1/4 Cup Mozzarella and 1/2 Cup Feta cheese.
      6.  Bake at 375° for 25 minutes or until cheese is melted and dish is heated through.

    Mediterranean Mahi Mahi

    Fresh white fish paired with a light tomato, olive, and artichoke sauce.  The Italian herbs oregano and basil pair well with the orange and lemon to really bring a lot of fresh flavor to the fish.  I was inspired by a recipe in Bon Appetit, and modified it to my own liking.  I added Artichokes, used Black Olives instead of Green, and added in lemon juice to give it more flavor and moisture.  Not only is this Mediterranean dish heart-healthy, using olive oil, tomatoes, olives, and artichokes over white fish, but it is absolutely delicious also.  When we ate it, we both agreed it tasted so decadent (yet it was so so healthy).

    Ingredients:
    2 Tbsp. Olive Oil
    1/3 Cup Minced Onion
    1 Cup Dry White (or Rose) Wine
    1 (14 ounce) Can of Stewed or Diced Tomatoes
    2 tsp. Garlic Powder
    2 tsp. Dried Oregano (or 2 Tbsp. Fresh)
    1 tsp. Dried Parsley (or 1 Tbsp. Fresh)
    2 tsp. Dried Basil (or 2 Tbsp. Fresh)
    4 4-5 oz. Mahi Mahi Fillets
    1 Small Can Sliced Black Olives
    1 Can Quartered Artichoke Hearts
    2 tsp. Dried Oregano (or 2 Tbsp. Fresh)
    2 tsp. Fresh Orange Zest
    2 tsp. Lemon Juice

    Directions.
    1. Heat oil in large skillet over medium high heat.  Add in minced onion and cook about 3-4 minutes.  
    2. Pour in wine and boil about 3 minutes, or until it's reduced to 3/4 Cup
    3.  Stir in the tomatoes with juice and bring to a boil.  
    4.  Sprinkle salt and pepper on the fish.  Place fillets on top of tomato mixture.  Reduce heat to medium-low, cover, and cook for 10-12 minutes, or until fish is opaque and cooked through.
    5.  Transfer fish to plate and cover with foil to keep warm.
    6.  Add black olives, artichokes, orange peel, lemon juice, oregano, and basil to tomato sauce.  Bring to a boil over medium-high heat and cook about 7-8 minutes, or until thick and reduced.  
    7.  Place a Mahi Mahi fillet on a plate and cover with 1/4 of the sauce.  Serve with Italian bread and a side of (or on a bed of, as I did) steamed spinach.  Or, for more substance, serve over cooked brown rice or wheat pasta.

    Healthy Tomato Pasta Sauce

    I'll admit it, I usually just buy pre-made pasta sauce.  However, I wanted to try to make my own, to make it healthier with a variety of organic veggies and reduced sodium (store-bought always have so much sodium).  I adapted a recipe from Jamie Oliver below.  This recipe makes quite a bit of sauce (13-14 cups worth), so have some freezer bags on hand to freeze some (or store in the refrigerator if eating within the month).  This sauce makes for a quick and easy (and healthy) meal topped over whole-wheat pasta with fresh Parmesan cheese on top.  Or, you can use this sauce as a pizza sauce or as a base for Lasagna, Chicken Cacciatore, soup, or a number of other meals.  Feel free to change up the recipe a bit, by adding in some fresh mushrooms, zucchini, or whatever else you think sounds good!  Hope you like it!

    Ingredients:

    1 Tbsp. Olive Oil
    2 Celery Stalks, Chopped
    2 Red Bell Peppers, Chopped
    2 Carrots, Grated
    3 Tbsp. Minced Onion
    3 Tbsp. Minced Garlic
    1 Small Butternut Squash, peeled, seeds scooped, and grated or cubed
    2 - 28 oz Cans Plum Tomatoes (or use 1 1/2 lbs Fresh Tomatoes + 1 Cup Water)
    2 Cups Water
    1/4 Cup Dry Red Wine
    2 Tbsp. Dried Oregano (or 1/4 Cup Fresh)
    2 Tbsp. Dried Basil (or 1/4 Cup Fresh)
    Sea Salt
    Black Pepper

    Directions:
    1.  In large stockpot, heat olive oil over medium-high heat.  Stir in celery, red pepper, and carrots.  Add onion and garlic and heat for 15 minutes, stirring occasionally.
    2.  Add butternut squash to pan.  Stir in tomatoes, water, and wine.  Bring to a boil.
    3.  Reduce heat to low and stir in the oregano and basil. Simmer for 40-45 minutes.
    4.  Cool then use immersion blender (or regular blender, working in batches) to blend the sauce until smooth.
    5.  Season to taste with sea salt and pepper.



    Enjoy over whole-wheat pasta for a healthy meal!

    Asian Chicken Salad

    I was in the mood for something Asian-flavored with peanut sauce (I love peanut sauce and well, all things peanut butter), so decided to try to perfect a Asian Chicken Salad.  Using a combination of chopped peanuts and a soy and vinegar dressing with peanut butter, it has just the right amount of peanut flavor.  I added a little bit of Sriracha sauce, to give it a little kick.  Feel free to add more of it for more spice, but what I added was just enough to give a little flavor (but wasn't spicy at all).

    The result is a colorful chicken salad packed with a lot of flavor.  And you can't ignore the nutritional benefits of this salad.  Cabbage is loaded with Vitamins A, B, C, E, and K, fiber, folate, and low in calories.  Bell peppers are loaded with Vitamins A & C and antioxidants and carrots provide carotenoids and Vitamins A, K, and C.

    If you want to go vegetarian, you can simply leave out the chicken.  You can also use any type of cabbage you'd like--green is most popular, but I used red cabbage (has more antioxidants and basically, is prettier)  in this recipe.


    Ingredients:
    Salad:
    6-8 Cups Red Cabbage, Shredded (1 head cabbage)
    2 Red Bell Peppers, Cut Into Strips
    3/4 Cup Carrots, Shredded
    3/4 Cup Peanuts, Chopped
    1 Bunch Cilantro, Chopped (roughly 1/2 cup)
    1 lb. Chicken Breasts, Cooked and Cubed


    Dressing:
    1/4 Peanut, Olive, or Canola Oil
    1 tsp. Sugar (or Agave Nectar or Honey)
    3 tsp. Ginger
    1 Tbsp. Minced Garlic
    1/4 Cup Low-Sodium Soy Sauce
    3 Tbsp. Rice Vinegar (could sub Apple Cider Vinegar)
    2 Tbsp. Peanut Butter
    1 tsp. Sriracha sauce (to add a bit of spice)

    Directions:
    1. In a large salad bowl, stir together all the vegetables (cabbage, bell peppers, and carrots), peanuts, and the chicken.  Stir to combine well.
    2.  In a small bowl, whisk together the dressing ingredients.
    3.  Pour the dressing over the salad and toss or stir well to coat.

    Garnish with chow mein noodles, toasted slivered almonds, chopped green onions, or mandarin oranges if you desire!  To make it a vegetarian meal, just leave out the chicken.
