Love-Yourself Lentil Soup

Hearty soups, without hearty calories.  This quick-and-easy lentil soup is tasty and extremely healthy, with a variety of veggies and fiber, iron, folate, Vitamin B1, protein and potassium-rich lentils.  Health magazine named lentils as one of the five healthiest foods.  This is my first official recipe with lentils, so be prepared to get some more featuring this wonder-food!


Ingredients:
  • 3 Tbsp. Olive Oil
  • 4 Medium Carrots, Sliced
  • 2 Tbsp. Minced Onion
  • 1 1/2 cups Dried Lentils
  • 3 Stalks Celery, Diced
  • 2 Potatoes, Diced
  • 4 Garlic Cloves, Minced
  • 5 Cups Chicken or Vegetable (sodium-free) Broth
  • 1 Tomato, Diced
  • 1 tsp. Cumin
  • 1 tsp. Sea Salt
  • 1 tsp. Black Pepper

Directions:
1. Put olive oil in Dutch Oven (or large stockpot) over medium-high heat.  Once heated, add onion and carrots.  Stir for 3-5 minutes.
2.  Add in the rest of the ingredients and bring to a boil.
3.  Cover, reduce heat to low and simmer for about 40-50 minutes, or until the lentils are tender.

Season with sea salt and black pepper and serve with crackers or crusty bread.  Enjoy!


For freezing, divide soup into two large freezer bags.  Once at room temperature, cool completely in the refrigerator.  Once cold, put soup into a second freezer bag (better safe than sorry with freezer burn) and be sure to label and date the soup (I include the date I made it and the "eat by" date).  Freeze up to 3 months.
To reheat, dip the bag into hot water for 5 minutes.  Then, put soup into stockpot.  Cook over medium heat for about 25 minutes, or until hot, stirring occasionally.

Oatmeal Chocolate-Chip Raisin Cookies


I am in love with these cookies.  This will be my 2nd batch in less than a month.  By using organic ingredients (if you can--I did on everything but the sugar, baking soda, salt, cinnamon, and vanilla) and using part wheat flour with fiber-rich oatmeal and raisins and memory-boosting cinnamon, these cookies are a pretty healthy dessert also!  Great treat on a cool fall night!  Enjoy!

Ingredients:
1 Cup Butter, Softened
1 Cup Packed Brown Sugar
1/2 Cup White Sugar
2 Eggs
3 Tsp. Vanilla Extract
1/2 Cup Whole Wheat Flour
3/4 Cup All-Purpose Flour
1/2 Tsp. Baking Soda
1 Tsp. Salt
2 Tsp. Cinnamon
2 1/2 Cups Quick-Cooking Oats
1 Cup Semi-Sweet Chocolate Chips
1 Cup Raisins

Directions:
1. Preheat Oven to 325 degrees F.
2. In a large bowl (or your Kitchenaid mixer if you have one), cream together the butter and brown and white sugars until smooth and creamy.  Beat the eggs in, one at a time, then add in the vanilla.
3.  In a separate bowl, combine the whole-wheat and all-purpose flours with the baking soda, salt, and cinnamon.  A half-cup at a time, slowly beat in to the mixture.
4. Stir in by hand the oats, chocolate chips, and raisins.
5.  Drop by the heaping spoonful onto baking sheets about 2 inches apart.
6.  Bake for 10-12 minutes, or until lightly browned.  Transfer to wire cooling rack and enjoy!

Makes between 3 and 4 dozen cookies (depending on how heaping your spoonfuls are)

Sweet Potato Chutney Over Chops with Stuffed Pumpkin


Fall is here!  My FAVORITE season (leaves, pumpkins, Halloween, football, crisp air, apple-picking, cozy sweaters, need I go on?)  Time for pumpkins and other fall goodies!
I was searching for a yummy and healthy fall dinner recipe and found some on Better Homes and Gardens. I didn't tweak the recipes much.  I suggest first measuring out "all of the ingredients" (pun intended, say it out loud and then read my blog title out loud).  Second, start making the stuffed pumpkins.  Third, while your pumpkins are baking (the 1st time), start on the chops (turn to broil after pumpkins are done the 2nd time).  The timing should work well then!
NOTE:  This recipe took me quite a while to make, so if you want to save time, I would serve the potato stuffing not in the pumpkins (save the time cutting, cleaning, and cooking them), but just in the casserole dish.  However, if you're making a dinner for good presentation, this (using the pumpkins) is it!  I  hope you like them!

Sweet Potato Chutney Chops
Ingredients:
1/3 Cup Finely-Chopped Shallots
1/4 tsp. Crushed Red Pepper
4 Pork Loin Chops, about 1" thick
1/4 Cup Brown Sugar
1/4 Cup Apple Cider Vinegar
2 Tbsp. Dried Cranberries
1/2 tsp. Ginger (grated or powder)
1 Sweet Potato, Peeled and Finely-Chopped

Directions:
1.  Turn oven to Broil.
2. Combine shallots and red pepper in small bowl.  Put half aside for now (for chutney).  Rub remaining mixture on both sides of the pork chops.  Place on broiler pan and set aside.
3.  Time for the Chutney:  Combine the other half of the shallot mixture, brown sugar, apple cider vinegar, cranberries, and ginger in a medium saucepan over medium-high heat.  Stir in chopped sweet potato  and bring to a boil.  Reduce heat and simmer, covered, for about 10-12 minutes.  Stir occasionally.
4. While chutney is simmering, broil chops, turning once, about 3-5 minutes per side.  Top with chutney and serve with stuffed pumpkin (below) and some green beans.

Stuffed Pumpkins
Ingredients:
4 Miniature Pumpkins
2 Medium Baking Potatoes (remember, organic if you can!), Peeled and Quartered
1/2 Cup Canned Pumpkin (ezier and quickier way)
1/2 Tbsp. Organic Butter
1/8 tsp. Ground Nutmeg
1/4 Cup Fat-free organic milk (or soy milk)
1/2 Cup Shredded Jarlsberg Cheese

Directions:
1.  Preheat Oven to 325 degrees F.  Begin to bring water to a boil on stovetop in medium saucepan.
2.  Cut off the tops of the pumpkins.  Remove seeds and strings from inside the pumpkins (keep seeds for roasting!).  Place pumpkins, cut-side down on an ungreased baking sheet.  Bake for 20-25 minutes or until pumpkins are soft.  Set aside.
3.  While pumpkins are baking, place quartered potatoes into the boiling water and cook for 20-25 minutes or until soft.  Drain potatoes.
4.  Using electric mixer (I love my Kitchenaid!), beat potatoes.  Add in canned pumpkin, butter, and nutmeg to potatoes and continue to mix.  Gradually beat in the milk.  Stir in cheese by hand.  Sprinkle with pepper.
5.  Spoon potato mixture into pumpkin shells.  Put any leftover potato mixture into a small casserole dish.  Place pumpkin shells on baking sheet.  Loosely cover both shells and casserole with foil.
6. Bake for 15-20 minutes (uncover in last 5 minutes).

Add some steamed green beans. Bon Appetit!

Turkey Tortellini Soup

SOUP TIME!  Now this is a season-appropriate meal for chilly fall.  This soup has a good amount of vegetables, is lower in sodium than any soup you'll buy in a store (yikes, holy hypertension) and tastes so good.  I made a huge batch of it and we had leftovers whenever we wanted a quick warm cup of soup.

Ingredients:
1 Lb. lean ground turkey breast
3 Tsp. Italian Seasoning (or combine parsley, oregano, garlic powder, and onion powder)
2 Cans (sodium-free, or extra low sodium) Tomato Soup (+1 can water)
4 Cups (sodium-free) chicken or vegetable broth
2 Cans Diced Tomatoes (no sodium-added)
1 Cup Diced Carrots
1 Cup  Diced Celery
1 Cup Chopped Green Beans (or cut-leaf spinach)
1 Large Pkg cheese-filled tri-color tortellini (20 ounce package I believe)

Directions:
1. Preheat oven to 375 degrees F.  Season your thawed turkey breast with the Italian seasoning.  Shape into 3/4"-1" balls and place on lined baking sheet.  Place turkey meatballs in oven for 15-20 minutes, or until lightly browned with no pink inside.  Meanwhile...
2. Turn stovetop to medium heat.  Combine broth and tomato soup in a stockpot.
3.  Add in your tomatoes, diced carrots and celery, and chopped green beans.  Cook for about 10 minutes. Stir occasionally.
4.  Add in the tortellini pasta and continue cooking for 5 minutes.  Stir occasionally.
5.  Place cooked turkey meatballs in the stockpot and cook for another 5 minutes.

Serve with a crusty loaf of Italian bread and enjoy!

Southwest Chicken Salad

Ok, summer's pretty much gone and I promised more salad recipes.  Oops, sorry. I made a lot of salads this summer and didn't post a lot of recipes for them.  I absolutely love how healthy and filling salads are, as well as how great they taste and how good they make you feel (and look).  This recipe is filled with veggies, fiber, lean protein (beans and chicken) and the spiciness is a metabolism-booster.  I know there aren't photos-but I'll post when those when I make it again.  I hope you enjoy it on one of our last warm days!

Ingredients (4 servings):

  • 1 Head of Romaine Lettuce
  • 1 lb. Chicken Breasts, cut into 1-2" cubes
  • 1 Red Bell Pepper, cut into strips
  • 1 Green Bell Pepper, cut into strips
  • 2 Ears of Corn, cooked with corn cut off
  • 1 Tomato, diced
  • 1 Can Black Beans, rinsed and drained
  • 1/2 cup Cheddar cheese (reduced fat or fat-free)
  • 3 Tbsp. Chopped Fresh Cilantro
  • 1/2 cup Fat-free sour cream
  • 1/2 cup Salsa
  • 1 Lime, quartered

Directions:
1. Heat olive oil in skillet over medium-high heat.  Place cubed hicken in skillet and cook for approximately 10 minutes, or until chicken pieces are no longer pink.  Remove from heat.
2. Rinse and cut or tear the romaine lettuce.  Divide onto four plates.
3. Evenly place the red and green pepper strips on each of the salads.
4.  Add the cooked corn (Cooking note: Place ears of corn in boiling water for approximately 5-7 minutes.  Remove from heat.  Once cooled, use a knife to cut the corn off the cob, rotating the corn as you cut each additional row).
5. Add the black beans to the salads.
6.  Place 1/4 of the cheese on each of the 4 salads (1/8 cup each).
7.  Add the cooked chicken to each of the salads.
8. Sprinkle fresh cilantro on each salad.
9. Combine the sour cream and salsa and stir well to create the salad dressing.  Drizzle on top of salad, or place on the side in a small ramekin.
10. Squeeze one lime wedge on each salad.

Serve immediately!

Sloppy (Turkey) Joe's


This meal was inspired by Adam Sandler and Chris Farley on SNL, doing "Lunch Lady Land."  You know, "sloppy joe, slop sloppy joes."  Watch it for a laugh, or listen while you cook.

Anyway, sloppy joes can be made healthy by using lean turkey meat, fresh tomatoes (instead of ketchup with high-fructose corn syrup), organic bell pepper, and whole grain buns.   

Ingredients
  • 1 Tbsp. Olive Oil
  • 1 lb. Ground Turkey (99% lean is what I used)
  • 2 tsp. Minced Onion
  • 1 Organic Green Bell Pepper, diced
  • 1 tsp. Garlic Powder
  • Coarse salt and ground pepper, to taste
  • 1 can (8 oz) Organic Tomato Sauce
  • 1 can (14.5 oz) Organic Crushed Tomatoes (or use fresh)
  • 2 Tbsp.  Brown Sugar
  • 1 Tbsp. Cider Vinegar
  • 1 Tbsp. Worcestershire Sauce
  • 4 Whole-Wheat Hamburger Rolls

Directions:

  1. Over medium heat, heat oil in a large saucepan.   Cook the turkey and onion until turkey is no longer pink.
  2. Add diced bell pepper and cook for another 1-2 minutes.
  3. Reduce heat to simmer.  Drain meat and put back in pan.
  4. Add in next seven ingredients (garlic powder, salt/pepper, tomato sauce, tomatoes, brown sugar, cider vinegar, and Worcestershire.  Simmer for 10 minutes, stirring occasionally.
  5. Serve on buns with Baked Sweet Potato Fries (see BBQ Chicken with Sweet Potato Fries Recipe) and Fresh Steamed Green Beans  (Steam with 2 Tbsp. Water for 5 minutes on stovetop while meat is simmering.  Or, my favorite, use the Pampered Chef microwave steamer. Top with a little melted organic butter) for your side dishes. 
For Freezing: You can freeze the Sloppy Turkey Joe meat for up to 3 months.  Just store in an airtight plastic bag (double bag) and be sure to label/date the bag.  Let defrost in the refrigerator during the day.  Then, put in skillet and cook on low for 10-15 minutes, until hot.

Sweet 'n Sour Chicken Stir-Fry


You've gotta love stir-fries.  They are really fast and easy to make and also one of my favorite ways to get my daily dose of a variety of vegetables--the more color, the healthier (and of course, I used all organic and encourage you to do so also).  Plus, stir-fries taste so good; it doesn't even taste like you're eating healthy.  

Ingredients:

16 oz Boneless Skinless Chicken Breasts (Organic!)
1/4 cup Cornstarch
2 Tbsp. Reduced-Sodium Soy Sauce
1 tsp.  Ground Ginger
1 tsp. Garlic Powder
1 cup  Chicken Broth
1/3 cup Sweet 'n Sour Sauce (try to find one with high fructose corn syrup and too many preservatives!)
3 Tbsp Cooking Oil, divided
2 cups Broccoli Florets
1 cup Sliced Carrots (about 3 carrots)
1 Red Bell Pepper, cut into strips
1 Green Bell Pepper, cut into strips
4 oz. Mushrooms (I used canned, but fresh also works)
Whole-Grain Brown Rice

Directions:








1.  Cut chicken into approximately 1-in. squares; place in a bowl (or plastic bag) with cornstarch and toss to coat.
2.  In a separate bowl, combine soy sauce, ginger, garlic powder, sugar, and chicken broth. Set aside. 
3. Over Medium-High to High heat, heat 2 Tbsp. oil in a large skillet or wok.  Once oil is warm, add chicken and stir-fry 3-5 minutes (or until no longer pink).  Remove from skillet/wok. 
4.  Add remaining oil. Stir- fry broccoli, carrots, bell peppers, and mushrooms for 5-7 minutes or until crisp-tender.  
5.  Add chicken to the skillet.  Pour in chicken broth mixture and sweet and sour sauce. Cook and stir until thickened and hot.
6.  Serve over a bed of whole-grain brown rice (I made instant brown rice, bowling water while I cut chicken and adding rice after chicken was cooked and before I stir-fried the veggies).

Tomato & Goat Cheese Tart


I tried this recipe out as an appetizer for a "gourmet" meal I made at home for Aaron and I's two-year Wedding Anniversary and LOVED it.  Thus, I'm sharing the recipe.  This recipe is really easy, tasty, light, and healthy.

Ingredients:
6 sheets Phyllo Dough (I used Athens)
Olive Oil or Butter Cooking Spray
2 Tbsp Olive Oil
1 (Globe--big round) Tomato, Sliced and Halved
2 - 2 1/2 oz Fresh Goat Cheese (I used Chavrie with herbs--in basic grocery stores)
2 tsp. Fresh Parsley
1 tsp. Garlic Powder

Directions:
1. Preheat Oven to 350 degrees.
2. Lightly spray a baking sheet with cooking spray.  Place one thawed layer of phyllo dough on the baking sheet.
3. Lightly spray the first phyllo pastry sheet with cooking spray.  Place another thawed layer of phyllo dough on top of the sprayed layer.  Continue until you have all 6 layers.
4. Evenly place the tomato slices on top of the dough.
5. Cut or tear the goat cheese into small pieces (roughly 1/2" x 1/2") and evenly scatter on the dough and tomatoes.
6. Drizzle with the 2 Tbsp. olive oil.
7. Sprinkle the dough with the parsley and garlic.
8. Bake for 15 minutes, or until the edges are lightly brown and the cheese is slightly melted.

Cut into 8 squares and enjoy!

"Indulgent" Banana Bread

I think I may have finally perfected my Banana Bread recipe to a point where it tastes completely indulgent, but is really pretty healthy and good for you.  There is minimal sugar, only 1 egg, and made with whole grains, fruit, and cinnamon (did you know cinnamon can reduce your blood sugar and cholesterol, improve cognitive performance, fight infections, and ease body pains?).  You could experiment with substitutes for the brown sugar (honey, juice, applesauce) if you wanted it healthier yet.  I've tried egg substitutes, or egg whites, but just wasn't quite happy enough with, so have settled on 1 whole egg.  Let me know if you like it!

Ingredients:

5 Dry Ingredients:
1 cup Whole Wheat Flour
1 cup Bread Flour (combo of Whole Wheat & Barley Flour)
1/2 tsp. Salt
1 tsp. Baking Powder
1 tsp. Baking Soda

Other Ingredients:
1 Egg
1/2 cup Brown Sugar
1 1/2 cups Mashed Ripe Bananas (4-5 Bananas)
1 tsp. Skim Milk
1 tsp. Cinnamon
2 tsp. Vanilla Extract

Optional Add-in Ingredient:
6-10 oz Chocolate Chips or Chopped Walnuts

Directions:
1. Preheat Oven to 350 degrees.
2. Combine the dry ingredients in separate bowl.
3. In Kitchenaid mixer (or regular bowl with hand-mixer), combine "other ingredients" (egg, brown sugar, bananas, milk, cinnamon, and vanilla) on medium speed until well-combined.
4. Reduce mixer speed to medium-low.
Slowly add in dry/flour mixture, just until combined (don't overmix).
5. Optional: Fold in chocolate chips or walnuts
(I added chocolate chips).
6. Pour batter into greased and flour-dusted bread pan.
7. Bake at 350 for 40-45 minutes, or until a toothpick inserted comes out clean.
8. Transfer to wire rack and let cool.

Turkey Taco Salad (and Turkey Tacos)


I love a great summer salad.  This salad is one of my favorites, because I can make it into a salad for me and my husband can have hard shell tacos.  Plus, it's got a lot of veggies, lean turkey meat (protein), and tastes really good.
Ingredients:
1 lb lean (99% fat-free) ground turkey meat
1 Package Whole-Grain Hard Shell Tacos
1 cup water
1 Head Iceburg or Romaine Lettuce
1 cup Mexican-style Organic Cheese (Nature's Promise is what I used)
2 cans Black Olives
2 Plum Tomatoes (organic if you can)
Taco Sauce
Salsa (again, I used organic)
Fat-free Organic Sour Cream (my preference)

Taco Seasoning:
1 Tbsp Chili Powder
1 tsp. Garlic Powder
1 tsp. Minced Onion
1/4 tsp. Red Pepper Flakes
1 tsp. Ground Cumin
1/2 tsp. Paprika
1 tsp. Black Pepper
1 tsp. Cornstarch

Directions:
1. Preheat Oven to 350 degrees.
2. Brown turkey in a skillet over medium-high heat.  Drain and return meat to pan.
3. Over medium-low heat, simmer the meat, the taco seasoning mix, and the 1 cup water.  Stir every few minutes, for about 15-20 minutes, or until the water has drained.  Meanwhile:
4. Cut up your lettuce.  **If making a salad, put enough lettuce on a plate for a salad.  If making tacos, place lettuce in a bowl.
5. Dice your tomatoes.  **If making a salad, sprinkle a handful of diced tomatoes on your salad.  If making tacos, place toms in a bowl.
6. Put olives on the salad (or in a bowl for tacos).
7.  Put 1/4 cup shredded cheese on the salad (or in a bowl for tacos).
8.  In last few minutes of the meat simmering, place 6 hardshell tacos on a baking sheet.  Bake for 3-4 minutes.  Remove from oven.
9.  Crunch up two hardshell tacos for each salad and sprinkle on top of salad.
10. Spoon some of seasoned meat mixture over salad (or in bottom of taco).
11. Top salad with a spoonful of sour cream and serve with Taco Sauce and Salsa.  If making tacos, put lettuce on top of the meat, then tomatoes, olives, cheese, and sour cream.  Finish with Taco Sauce and/or Salsa.
